Surprise Chocolate Pudding

"This was a favourite recipe in our house as the girls were growing up, still is often requested now if they come to us for a meal!"

Ingredients:

  • Pudding: 50g SR Flour
  • 50g Caster Sugar
  • 25g Cocoa Powder
  • 1 x 2.5ml spoon Cinnamon
  • 1 x 2.5ml spoon Baking Powder
  • 50g Soft Margarine
  • 2 Eggs
  • 1 or 2 drops Vanilla Essence
  • Sauce: 75g Dark Brown Sugar
  • 15g Cocoa Powder
  • 125ml Warm Water

Preheat oven to 180°C, Gas Mark 4. Grease a 1L pudding basin.

For the pudding: mix flour, sugar, cocoa, cinnamon and baking powder. Beat together marg, eggs and essence, add to the dry ingredients, beat well then place in the pudding basin.

For the sauce: Blend the sugar and cocoa with the water and carefully pour over the pudding mixture. Bake for 30-35 minutes.

When cooked the pudding will be well risen and the sauce will be at the bottom of the bowl.

Alternatively this recipe works well cooked in a microwave.
